Tender beef, golden baby potatoes and colorful peppers cooked in a rich garlic herb sauce — hearty, juicy and full of flavor.
Ingredients
- 700 g beef, cut into bite-sized cubes
- 700 g baby potatoes, halved
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into wedges
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp butter
- 250 ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp black pepper
- Salt to taste
- Fresh parsley, chopped
- Heat the olive oil in a large pan or Dutch oven. Add the beef and sear over high heat until nicely browned. Remove and set aside.
- Add the potatoes to the same pan and cook for about 6–8 minutes until lightly golden.
- Add the red and yellow peppers and red onion. Cook for another 3–4 minutes.
- Add the butter and garlic and stir for about 30 seconds.
- Return the beef to the pan. Add beef stock, Worcestershire sauce, soy sauce, paprika, thyme, oregano, black pepper and a little salt.
- Stir everything together, cover and simmer over medium-low heat until the potatoes are tender and the beef is cooked through. Let the sauce reduce slightly at the end.
- Sprinkle generously with fresh parsley and serve hot.
