Garlic Herb Beef & Potatoes

Tender beef, golden baby potatoes and colorful peppers cooked in a rich garlic herb sauce — hearty, juicy and full of flavor.

Ingredients

  • 700 g beef, cut into bite-sized cubes
  • 700 g baby potatoes, halved
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 250 ml beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • Salt to taste
  • Fresh parsley, chopped
  1. Heat the olive oil in a large pan or Dutch oven. Add the beef and sear over high heat until nicely browned. Remove and set aside.
  2. Add the potatoes to the same pan and cook for about 6–8 minutes until lightly golden.
  3. Add the red and yellow peppers and red onion. Cook for another 3–4 minutes.
  4. Add the butter and garlic and stir for about 30 seconds.
  5. Return the beef to the pan. Add beef stock, Worcestershire sauce, soy sauce, paprika, thyme, oregano, black pepper and a little salt.
  6. Stir everything together, cover and simmer over medium-low heat until the potatoes are tender and the beef is cooked through. Let the sauce reduce slightly at the end.
  7. Sprinkle generously with fresh parsley and serve hot.
